Banana Nut Bread

Yeah, they look pretty gross, huh? 


I most definitely do not like bananas that old, nasty, mushy ripe. They just so happen to be  perfect for banana nut bread though! Mmmmm.

Oh yes, that's butter.

Ooooh see? I told you. : ) How delish.

So, how about you? You got some old bananas hanging around your house? Well, for goodness sake, don't throw a whole 50 cents away! (LOL) Make some yummy bread for your fam!

They'll love you for it, I promise.

Here's the recipe...

Ingredients:
~ 10 Tablespoons (plus 1 Teaspoon to grease the pan) of Butter
~ 1 Cup of Mashed Ripe Banana (2 large)
~ 1/2 Cup of Sour Cream (I used light)
~ 2 Large Eggs
1 & 1/2 Teaspoon of Vanilla Extract 
~ 2 Cups of Flour (I used whole grain)
~ 3/4 Cup of chopped glazed walnuts (I gave them a few pulses in the food processor)
~ 3/4 Cup plus 2 Tablespoons of Sugar
~ 1 Teaspoon of Baking Soda
~ 3/4 Teaspoon of Baking Powder
~ 1/2 Teaspoon of Salt

Directions:
* Preheat the oven to 350 Degrees*

* Grease the pan with 1 teaspoon of butter.

* Mix the banana, sour cream, eggs, and vanilla together in a bowl 
(a fork works just fine...I didn't bother with the electric mixer)

It should look like this...

* Next, Sift the flour (I won't lie, I totally skipped the sifting part...didn't make a difference), sugar, baking soda, and baking powder into a bowl.

* Add the room-temp butter and nuts into the bowl of dry ingredients. Stir until it looks like this... 


* Add the banana mixture into the dry ingredients and stir until well blended.

* Pour into the buttered baking dish (meatloaf pan) and bake for 1 hour and 10 minutes (don't forget the oven is to be set @ 350 degrees).


* Pull that baby out and enjoy a piece as soon as its cool enough to cut!


I ate mine with butter, but I also recommend apple butter, too. It's really good that way! Add a glass of milk (or even better, a cup of hot coffee) and you've got yourself the perfect anytime snack.

Question...How do you write on your pictures like that? it's cute! do you need a special program? I've always wanted to be able to do that.

I've heard of photoshop...I just haven't bought it yet.
Can you do it for free on photobucket? Do I just download photos on photobucket and they have the tools?
Also, did you do that watermark/ name through Pshop too?
Sorry so many questions :)

I have a banana bread problem... I can't just eat a little. I love it sooo much. Guess I need to work on the spirit of self control!!

I hate when bananas get to that mushy state as well. It seems to happen a lot faster too in the summer heat. I love banana nut bread though, but never think to make it. Now I'm craving it and will need to make some soon! Oh, and there is no other way to eat banana bread than with butter. Yummy!

...and that banana bread looks soooo yummy. I may just have to make some tomorrow with a little vanilla icecream on the side all melty with the warm bread. Like I need that!
